Garlic is easy to grow and can be grown year-round in mild climates. The use of garlic in China dates back thousands of years. It was consumed by ancient Greek and Roman soldiers, sailors and, according to Pliny the Elder, by the African peasantry. Galen eulogized it as the “rustic’s theriac” (cure-all) in the typical serving size of 1–3 cloves (3–9 grams), garlic provides certain B vitamins, including thiamin and pantothenic acid, as well as the dietary minerals, calcium, iron, and zinc.
